Day 2 of 30 Days of Healthy & High-protein Breakfast Meal Prep Recipes: Pancake Bowls😍 These contain between 27-36g protein per serving, depending on which yogurt you use! So many of you wanted the recipe when I showed these in my meal prep video, so I had to share the full recipe☺️ I used all purpose gluten-free flour mix in these which contains psyllium husk powder which absorbs some of the liquid, so if using a different type of flour, like wheat flour, you might need to add more of it, about 1/4-1/2 cup / 60-120 ml more should be enough!

Ingredients for three servings:
2 1/4 cups (lactose-free) low fat Greek yogurt (5 1/2 dl / 570g)
6 eggs
1 tablespoon maple syrup or sugar, or more to taste
1 tablespoon vanilla extract
1 cup all purpose (gluten-free) flour mix or oat flour (2 1/2 dl)
3 teaspoons baking powder

Toppings:

1. Mix the wet ingredients together
2. Add the dry ingredients and stir to combine
3. Divide into three greased glass containers
4. Top with berries
5. Bake at 180 Celsius degrees / 350 in Fahrenheit for about 20-25 minutes
6. Store in the fridge
7. Reheat in the microwave before serving

As some feedback for others, I made 1/3 of this and it ended up taking almost one hour to cook in a toaster oven, which is what I had available. I realized I had it in a container that was tall, rather than wide, so halfway through the time I transferred it to a lower, wider container. It took an additional 20 minutes beyond that and I’m not sure it was completely done, but I was pretty hungry at that point. I didn’t achieve that crispy brown color shown in the picture and it was like an allllllmost cooked pancake. I used 1 banana and a few fresh strawberries as my fruit and ended up adding a drizzle of syrup.
How long can you store these?
You can also use ground oatmeal to really up the protein! ❤

These are so awful lol it tastes WAY more like egg than it does a pancake. It’s like a frittata but worse somehow

If y'all like having flavor in your food, add salt to taste. Following the recipe, even with adding whole grain flour and whole milk greek yogurt, they are very bland.
