Chocolate Cherry Protein Muffins



Chocolate and Cherries are one of my favorite flavor combos – and if you’re a fan too, today’s muffin recipe is going to be one you’ll enjoy making again and again!

They have just the right amount of sweetness plus an extra dose of protein to fuel your body for whatever activities you have going on.

Cherries contain Vitamin C (great for your immune system) (1), potassium (which supports your ability to contract your muscles among other important functions) (2), and fiber (which helps keep your digestive system healthy) (3).

Chocolate Cherry Protein Muffins

Yield: 12 muffins

You will need: mixing bowls, measuring cups and spoons, wooden spoon, muffin tin, muffin paper liners (optional)

Ingredients:

  • 4 servings (136 grams) I ❤ Chocolate protein powder
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 3/4 cup almond flour
  • 1/4 cup cacao powder
  • 3 eggs
  • 1/4 cup coconut oil, softened or melted
  • 2 T maple syrup
  • 1/2 cup unsweetened almond milk (or non-dairy milk of choice)
  • 1/2 cup pitted cherries, fresh or frozen (halved)

Directions:

  1. Preheat the oven to 375 F. Line a 12 count muffin pan with muffin papers or lightly spray with oil.
  2. In a large mixing bowl, combine the protein powder, cacao, baking powder, salt, and almond flour.
  3. In a separate bowl, combine the eggs, coconut oil, maple syrup, and almond milk.
  4. Add the wet ingredients to the flour mixture, stirring to combine. Then fold in the cherries.
  5. Fill the muffin cups with batter (2/3 full) and bake for 15-17 minutes.
  6. Remove from oven and let cool for 5 minutes then take the muffins out of the pan and transfer to a cooling rack.
