Meatless Monday just got more fun

I have an entire vegetarian chapter in my cookbook that just might be my FAVORITE chapter of the whole book. We’re talkin’ veggie-packed enchiladas, casseroles, and of course, this luscious caramelized corn pasta.

  • The sauce is actually made from caramelizing both the corn and jalapeño, then blending some of that mixture with feta cheese to create a creamy, tangy, sweet, spicy sauce!
  • You can really use any pasta shape you’d like (including gluten-free!) I love a long noodle, but have even tried it with short pasta and it was still amazing.
  • It pairs beautifully with grilled chicken and shrimp, and would be a wonderful date night night meal with a side of steak. YUM.
