Made a few substitutions – 1/2 AP and 1/2 Sprouted Spelt, didn’t have the full cup for applesauce so substituted with plain yogurt, and it was successful with cutting the brown sugar with some coconut sugar, too! GREAT RECIPE! The perfect amount of sweetness without it being over the top! I totally made this for my husband since coffee cake is his favorite thing on earth, I’m not even a coffee cake person, but this might have changed me!

I made a double batch so I could take it to work – I did notice the “gummy” texture when mixing the dry ingredients with the wet, but I think it’s because I just had so much to mix that I had to do it for quite a while! Luckily, I don’t think it affected the overall outcome – I made sure to stop mixing as soon as I could. Will for sure be making this one again!

The first time I made it in a 9in cake pan as a birthday cake it was perfect. The second and third times were in 8×8 and still perfect. I’ve never gotten such compliments on it cake. [comment_content] => I was expecting this coffee cake to be dry (not because of the recipe, but because I grind my own flour fresh and kind of have to wing it.) but it was so good and moist! I ground 227.5g of einkorn for the cake and 130g of rye for the streusel. I used sucanat instead of brown sugar and baked it for 45 minutes. It was perfect! We didn’t quite let it cool long enough so the glaze did soak in a bit but that didn’t matter to us. Thanks for another awesome recipe! I don’t review each one we try but we love your blog.

We’ve made it several times and it is always a big hit–I first made it as a special treat for my husband, and my son liked it so much that he requested it as a special treat for him the next time it was his turn. 🙂 The brown butter smells so delicious and goes perfectly with the apples, and the middle streusel layer means that each bite gets a wonderful distribution of cake and streusel. Highly recommend!
