With this coconut key lime popsicle recipe, there’s no more buying expensive, sugary popsicles from the store! You can make your own with all-natural ingredients, some popsicle molds, a good mix here and there, and a simple assembly.

Then, just pop them (no pun intended 😂) into the freezer and put your patient hat on. The only hard part is waiting for them to freeze.

Coconut Key Lime Pie Popsicles – What You Need

  • Cans coconut cream: The base for these key lime popsicles, coconut cream is essential for that creamy, tropical taste.
  • Agave: The PERFECT natural sweetener for this recipe. It has a mild honey flavor and is less likely to crystallize in the freezer than sugar.
  • Lime: We used lime juice and lime zest to give these popsicles that amazing key lime flavor!
  • White chocolate chips: White chocolate tastes fantastic with the lime flavor of these coconut lime popsicles! It also makes them more sweet and indulgent.
  • Coconut oil: Coconut oil helps the white chocolate stay melty and gives these popsicles a nice, smooth texture.
  • Nilla wafers: We crumble these up to mimic a pie crust in the popsicle!
  • Popsicle molds: You’ll need some type of popsicle mold for these tasty treats.

Don’t have popsicle molds?

Don’t let not having popsicle molds stop you from making these delicious coconut key lime pie popsicles. You can use small paper cups or even an ice cube tray to make mini popsicles! Just cover the top with foil and stick a popsicle stick in the middle before freezing.

Tips for Easy Popsicle Making

Freeze popsicles for at least 8 hours. This will ensure they are solid enough to easily remove from the mold.

Run warm water over the mold before removing. This helps to loosen the popsicles and make them easier to remove without breaking. 

Make sure the popsicle sticks are securely placed in the mold before freezing. If they move around, it could make it difficult to remove the popsicles from the mold.
