  2. How to make lemon garlic pasta: Serves: 2 | Prep time: 5 mins | Cook time: 10 mins

    8 oz (225g) Pasta: Spaghetti or Linguine work best.

    3 tbsp Butter: Unsalted is preferred so you can control the salt.

    3-4 Cloves Garlic: Minced (measure with your heart, but don't skimp).

    1 Lemon: You’ll need both the juice and the zest.

    1/4 cup Parmesan Cheese: Freshly grated if possible.

    Red Pepper Flakes: A pinch for a little heat.

    Salt & Black Pepper: To taste.

    Optional: Fresh parsley or a splash of heavy cream Instructions:

    Boil the Pasta: Cook your pasta in a large pot of salted water according to the package directions until al dente.

    Pro Tip: Before draining, save about 1/2 cup of the starchy pasta water. This is the secret to a silky sauce.

    Sauté the Aromatics: While the pasta cooks, melt the butter in a large skillet over medium heat. Add the minced garlic and red pepper flakes. Sauté for about 1–2 minutes until the garlic is fragrant but not brown.

    Create the Sauce: Stir in the lemon juice and half of the lemon zest. Turn the heat to low.

    Toss and Emulsify: Add the cooked pasta directly into the skillet. Pour in half of the reserved pasta water and the Parmesan cheese. Toss vigorously with tongs. The cheese and starchy water will emulsify with the butter to create a glossy sauce.

    If it looks too dry, add more pasta water.
